The local cuisine of our hotel in Souillac
Eat & Drink
Maison Borrèze celebrates the Dordogne valley and travel with a fresh, elegant and generous menu. Each season has its own excellent products. Quercy lamb in spring, Périgord strawberries, melon and trout in summer, porcini mushrooms, beef, walnuts and saffron in autumn, and foie gras, caviar and truffles in winter.
Diners can enjoy this generous cuisine in a warm, intimate setting.
The table at Maison Borrèze is above all a place for sharing, where every meal becomes a moment of authentic pleasure.

Chill at the cathedral bar
Vibrate to the muffled sound of an eclectic playlist.
Thejazzy bar in the 6-meter-high nave is an invitation to travel, with a menu of wines, spirits and cocktails inspired by the Roaring Twenties and a rediscovered spirit of freedom. Nestled in this intimate setting, the delicate sound of the piano accompanies every moment, sublimating the atmosphere with a note of grace and timelessness.
At tea time, there’s nothing like a selection of light, gourmet pastries to accompany a selection of rare teas and coffees. This French-style snack, rich in sweet treats, can also be accompanied by champagne or a non-alcoholic cocktail prepared just for you.
For book lovers, and because rain makes the Dordogne Valley even more beautiful, a collection of carefully selected books covers the themes of travel and contemporary architecture.
Book your table to enjoy the spectacular sunset over the Byzantine domes of the abbey church and the rooftops of the medieval town.
Restaurant
Located in the extension of the pool terrace, the Maison Borrèze restaurant offers an intimate atmosphere with 32 covers, in a tasteful decor combining the red of Occitan terracotta, the honey of light oak, and the green granite of Portugal.
The menu is conceived in a spirit of freshness, elegance and generosity, and draws its inspiration from the rich diversity of the Dordogne Valley, a Unesco-listed biodiversity reserve.

Breakfast
& brunch
Breakfast à la Française is an international institution, born in the 18th century with the arrival of exotic beverages (tea, coffee), and the rise of pastry-making with brioches and viennoiseries. Reserved for a privileged few, this joyous moment of the day became a hotel standard in the 19th century under the baton of Escoffier.
Maison Borrèze continues this long tradition, while opening it up to travel and the discovery of contemporary flavors and new lifestyles to make breakfast an unforgettable experience.
On Sundays, the Maison Borrèze experience is extended and broadened in the form of a brunch, featuring a menu combining classic French viennoiserie, surprisingly light sweets and savory bites.
